Herb Roasted Salmon with Dijon Sauce
Serves 4
This salmon recipe is simple to make and full of flavor. Serve with roasted potatoes and broccoli add 1 to 2 crushed garlic cloves to the dijon sauce.
¼ cup dijon mustard
¼ cup finely minced fresh chives
2 tablespoons finely minced parsley
1 lemon freshly squeezed
2 Garlic cloves, crushed
1 tablespoon extra virgin olive oil
½ teaspoon sea salt
2 pinches freshly ground black pepper
2 pounds wild salmon fillets
Preheat the oven to 400 degrees F.
- While the oven is preheating, combine the dijon mustard, chives, parsley, lemon juice, garlic, olive oil, salt, and pepper in a small bowl, and set aside.
- Place salmon on a baking sheet lined with parchment or a silpat.
- Pour the dijon sauce over the salmon, making sure it is evenly coated.
- Bake the salmon for 8-12 minutes, depending on the thickness of your filet. Generally, consider cooking 4-6 minutes per half-inch of thickness at the thickest point.
- When the salmon is done it should be slightly firm to the touch and just start to flake apart.
