Herb Roasted Salmon with Dijon Sauce

Serves 4

This  salmon recipe is simple to make and full of flavor. Serve with roasted potatoes and broccoli add 1 to 2 crushed garlic cloves to the dijon sauce.

 

¼  cup  dijon mustard

¼  cup  finely minced  fresh chives

2  tablespoons  finely minced  parsley

lemon  freshly squeezed 

2 Garlic cloves, crushed

1  tablespoon  extra virgin olive oil

½  teaspoon  sea salt

2  pinches  freshly ground  black pepper

2  pounds  wild salmon fillets

Preheat the oven to 400 degrees F.

  1. While the oven is preheating, combine the dijon mustard, chives, parsley, lemon juice, garlic, olive oil, salt, and pepper in a small bowl, and set aside. 
  2. Place salmon on a baking sheet lined with parchment or a silpat.
  3. Pour the dijon sauce over the salmon, making sure it is evenly coated.
  4. Bake the salmon for 8-12 minutes, depending on the thickness of your filet. Generally, consider cooking 4-6 minutes per half-inch of thickness at the thickest point.
  5. When the salmon is done it should be slightly firm to the touch and just start to flake apart.
