Winter Fruit Salad

This salad is antioxidant-rich, colorful and quite tasty!

Serves 5

2  pears  cored and sliced 

3  persimmons  sliced 

3  kiwi fruit  peeled and sliced 

3  mandarin oranges  peeled and sectioned 

1  pomegranate  arils removed 

1 large  lime  zested and juiced 

Open the pomegranate and removing the arils. Do this over a large bowl. You can also purchase just the arils.

Add the pear slices, persimmon slices, kiwi slices, and mandarin sections to a serving bowl or platter. Sprinkle with the pomegranate arils.

Zest the lime with a microplane grater, then juice it. Whisk the zest and juice together in a small bowl and then drizzle it over the fruit salad. Serve.
