Ground Chicken Taco Salad
Serves 3-4
I created this recipe when all I had was a pound package of ground chicken and 30 minutes to prepare dinner! I used what was in my pantry and frig to create this quick and delicious dinner.
1 tablespoon olive oil
2 garlic cloves, minced
1 small yellow onion, minced
2 large red bell peppers, diced
1 lb. ground chicken
3 tablespoons homemade taco seasoning or all-natural taco seasoning packet
1/2 cup fire roasted diced tomatoes, undrained
15 oz. canned black beans, drained and rinsed
- Heat 1 tbsp. oil in large skillet, then add in diced onion. Cook for 2-3 minutes over medium heat then add in diced bell pepper and garlic. Cook until soft but not browned, about 6 minutes.
- Add in ground chicken to skillet, breaking apart with spoon. Cook until no longer pink, about 3-4 minutes, then add in taco seasoning and diced fire roasted tomatoes. Bring to a boil then lower heat to simmer to create sauce.
- Stir in black beans.
- Serve over shredded romaine lettuce and top with optional roasted cherry tomatoes, sliced avocado, and parmesan cheese.
