Ground Chicken Taco Salad

 

Serves 3-4

I created this recipe when all I had was a pound package of ground chicken and 30 minutes to prepare dinner! I used what was in my pantry and frig to create this quick and delicious dinner.

1 tablespoon olive oil

2 garlic cloves, minced

1 small yellow onion, minced

2 large red bell peppers, diced

1 lb. ground chicken

3 tablespoons homemade taco seasoning or all-natural taco seasoning packet

1/2 cup fire roasted diced tomatoes, undrained

15 oz. canned black beans, drained and rinsed

 

  1. Heat 1 tbsp. oil in large skillet, then add in diced onion. Cook for 2-3 minutes over medium heat then add in diced bell pepper and garlic. Cook until soft but not browned, about 6 minutes.
  2. Add in ground chicken to skillet, breaking apart with spoon. Cook until no longer pink, about 3-4 minutes, then add in taco seasoning and diced fire roasted tomatoes. Bring to a boil then lower heat to simmer to create sauce.
  3. Stir in black beans.
  4. Serve over shredded romaine lettuce and top with optional roasted cherry tomatoes, sliced avocado, and parmesan cheese.
