Baked Acorn Squash with Apples and Cinnamon
Serves 4
2 medium acorn squash cut into halves
2 large granny smith apples peeled and sliced
4 tablespoons maple syrup
1½ teaspoons cinnamon
½ teaspoon ground ginger
2 Tablespoons butter, optional
- Preheat oven to 375 degrees F.
- Cut the acorn squash in half cross-wise. Scoop out the seeds with a spoon.
- Place the squash halves, flesh-side up in a 9x13 baking dish.
- Peel and thinly slice the apples. Place them into a bowl and add the maple syrup, cinnamon and ginger. Toss together.
- Spoon the apple mixture into the squash halves. If using, add slices of butter to the top of each apple mixture.
- Cover baking dish with tinfoil and bake for about 75 to 90 minutes, or until the squash is tender.
- Garnish with chopped walnuts or toasted pumpkin seeds.
- Sprinkle each squash half with extra cinnamon if desired.
