Baked Acorn Squash with Apples and Cinnamon

Serves 4

2 medium acorn squash cut into halves

2 large granny smith apples peeled and sliced

4 tablespoons maple syrup

1½ teaspoons cinnamon

½ teaspoon ground ginger

2 Tablespoons butter, optional

 

  1. Preheat oven to 375 degrees F.
  2. Cut the acorn squash in half cross-wise. Scoop out the seeds with a spoon. 
  3. Place the squash halves, flesh-side up in a 9x13 baking dish. 
  4. Peel and thinly slice the apples. Place them into a bowl and add the maple syrup, cinnamon and ginger. Toss together. 
  5. Spoon the apple mixture into the squash halves. If using, add slices of butter to the top of each apple mixture. 
  6. Cover baking dish with tinfoil and bake for about 75 to 90 minutes, or until the squash is tender. 
  7. Garnish with chopped walnuts or toasted pumpkin seeds.
  8. Sprinkle each squash half with extra cinnamon if desired.
