Rosemary Cider Mocktail

Many types of mocktails are high in sugar, but this easy mocktail cuts down on the calories and carbs by using club soda and a sugar-free simple syrup.

Servings: 1 (1 cup yield)

Honey Rosemary Simple Syrup

½ cup water

½ cup honey

1 sprig rosemary

Mocktail

4 ounces apple cider

4 ounces club soda or seltzer

1 tablespoon honey simple syrup

1 sprig fresh rosemary (Optional)

To Prepare Honey Rosemary Simple Syrup: Place honey and water into a small saucepan. Add the rosemary sprig.
Bring to a boil, while stirring occasionally. Next, turn the heat down to low and let simmer for an additional 10 minutes, stirring consistently.
When the syrup has reduced and thickened a little bit, remove from heat and let cool for 30 minutes. Discard the rosemary sprig and pour into a jar, and place in the fridge to cool.

The ratio for this simple syrup is 1:1 honey to water. Make enough for a couple of weeks!
Store in glass, airtight container in the fridge.

To prepare mocktail: Combine cider, club soda (or seltzer) and simple syrup in a highball glass. (Reserve remaining simple syrup for another use.) Garnish with rosemary sprig, if desired.

Make Ahead Tip: Refrigerate simple syrup for up to 1 week.
