Ingredients

2 cups tomatoes, grape, halved

1/2 cup onion, finely chopped

2 red bell pepper, diced

4 cloves garlic, minced

1 T. olive oil, may add additional

1/4 tsp salt

1/2 cup cilantro, fresh, chopped

2 cups roasted corn, fresh or frozen

2/3 cup black beans, drained and rinsed

16 oz tofu, extra firm, crumbled(can substitute ground beef, ground chicken or ground turkey)

2 tsp chili powder
-
1 tsp cumin, dried
-
½ tsp turmeric, dried

2 avocados, sliced

- Preheat oven to 400° F.
- Cut cherry tomatoes, onions, red pepper,
garlic, and cilantro.
- Drain and rinse beans.
- Thaw corn if using frozen
- Slice avocado.
- Make
In a small bowl, combine grape tomatoes, onion, red pepper, and garlic. Toss with olive oil.
- In a large bowl, mix crumbled tofu, ground beef
ground chicken or ground turkey with crumble with chili, cumin, and turmeric.
- On a sheet pan, lined with parchment paper
evenly spread the tomato mixture. Sprinkle with salt.
- Bake for about 15 minutes until tomatoes begin
to break down. Remove from oven and toss with cilantro, black beans and corn.
