Turkey Spinach Burgers

Serves 4

 

Mediterranean Inspired flavors with healthy protein

Serve with a dollop of Tzatziki

 

1 pound ground turkey or chicken

2 cups loosely packed baby spinach, roughly chopped

3 green onions, white and green parts, thinly sliced

3 garlic cloves, minced

1 tablespoon finely chopped fresh oregano.

1 teaspoon kosher salt

1/2 teaspoon freshly ground black pepper

3 tablespoons olive oil

 

In a medium bowl, combine the spinach, turkey, green onions, garlic, oregano, salt, and pepper. Use your hands to mix everything together. Divide the mixture evenly and form four large burgers.

In a large skillet over medium heat, heat the oil. Cook the burgers for approximately 5 minutes per side, or until golden brown and cooked through.

Notes:

If you don't have fresh oregano, use thyme or dill. If you want to substitute with dried herbs, you use just one teaspoon.

Optional Additions: Diced red bell peppers, sun-dried tomatoes

Store in an airtight container in the refrigerator for three to four days. Store in the freezer for up to three months.

To reheat

Preheat the oven to 350 degrees and reheat for four to five minutes, until warmed through. You can also warm the patties in the microwave for one to two minutes.

 I always double the recipe and freeze a batch.
