Beef Shawarma

Ingredients
- 1 1/2 lbs. flank steak
- 3 tablespoons extra virgin olive oil, divided
- 1 tablespoon apple cider vinegar
- 1 tablespoon flour
- 1teaspoon ground cumin
- 1 teaspoon paprika
- 1 teaspoon kosher salt
- 1/2 teaspoon freshly ground black pepper
- 1/2 teaspoon garlic powder
- 1/4 teaspoon ground allspice
- 1/4 teaspoon cayenne pepper
- 1/4 teaspoon ground cinnamon
- 3 tablespoons tahini
- 2 tablespoons sour cream or whole milk Greek yogurt
- 2 tablespoons freshly squeezed lemon juice
- 1/4 teaspoon salt
- 1 garlic clove, minced
- Feta
- Sliced tomatoes
- Julienned Romaine Lettuce leaves
Directions
- In a small bowl, combine the flour, cumin, paprika, salt, black pepper, garlic powder, allspice, cayenne, and cinnamon. Stir well. Add one tablespoon of the oil and the vinegar.
- Make a paste of the above and rub on both sides of the flank steak. Let marinate at room temperature for 30 minutes or for several hours in the refrigerator.
- Tahini Sauce
- Combine the tahini, yogurt, lemon juice, salt, and garlic. Whisk until smooth. You may need to add 1 to 2 tablespoons of water as needed until the sauce is smooth and creamy. Set aside.
