Summer Melon Salad
Try a Turkey Burger rather than a beef burger!
Ingredients

2 cups watermelon, cubed

2 cups honey dew, cubed

2 cups cantaloupe, cubed

2 large cucumbers, peeled, sliced and
quartered

¼ cups feta, cubed

2 tablespoons fresh mint, finely chopped

1 tablespoon extra virgin olive oil

1 lime, juiced (about 2 tablespoons
juice)

1 teaspoon honey
Directions
- To make the dressing: Whisk the dressing
ingredients together in a small bowl.
Combine the watermelon, honeydew, cantaloupe, cucumber, mint, and dressing in a large salad bowl.
- Add the feta and gently combine.
- Garnish with additional mint if desired.
